Bradley Manchester, founder and chef/owner of Glutton, believes in living life to the fullest and enjoying life’s indulgences. His culinary style combines clean, ingredient-driven dishes that rely upon interesting textures, an abundance of fresh herbs and acids, such as citrus and vinegars, to enliven the palate and invigorate the senses. Devoted to locally and regionally grown produce and a cultivator of his own on-premises herb garden at Glutton, Manchester incorporates the most vibrant flavors of the season into every dish he creates. Glutton is the embodiment of Manchester’s philosophy that making good food isn’t rocket science, but requires making the most out of the highest quality ingredients available.
Prior to developing Glutton, Manchester oversaw the culinary program for five restaurants at Red Rock Resort. Previously, he served on the opening team of The Cosmopolitan of Las Vegas, at the Wit Hotel in Chicago, Caesars Palace and the Renaissance Hotel in Las Vegas and Monarch Urban Bistro Lounge, which was named one of Houston’s best restaurants by The New York Times.
When he is not in the kitchen, he enjoys traveling, spending time on the beach with his family and reading. On Sundays, he looks forward to relaxing with friends, watching football and, of course having the grill going.
